Domaine Guiberteau Saumur Clos de Guichaux Blanc 2021

Domaine Guiberteau Saumur Clos de Guichaux Blanc is a 1.4-hectare monopole in the Bizay terroir, one of the historically renowned white sites of Saumur.

The clos lies in the small village of Épieds near Brézé, on the classic clay and limestone of the district, though with only about 30 centimetres of topsoil before the roots plunge into pure chalky bedrock. Romain Guiberteau is among the growers who returned Saumur's limestone hillsides to serious white wine, working with Chenin Blanc alone and treating each site separately. The wine ferments and matures for twelve months on lees in 600-litre barrels of two to four years, lightly toasted casks from Atelier Centre France and François Frères that previously held the Brézé cuvée, followed by six months in tank. It did not go through malolactic conversion in this bottling, which leaves the acidity firm and the texture taut.

Worth two or three years to settle, then good for a decade. Serve at 10-12°C with roast pork, turbot or a plate of hard sheep's cheese.
