Domaine Henri Germain Bourgogne Aligoté 2021

Domaine Henri Germain Bourgogne Aligoté comes from a single plot of vines planted in 1977 in Les Plançons, in Meursault.

Aligoté is Burgundy's second white grape, long treated as an also-ran but increasingly taken seriously where old vines sit on decent slope land. Germain's plot is in Les Plançons, a Meursault terroir, and was planted in 1977, so the vines are now well established. The grapes are the last on the estate to be picked, usually in late September, which allows the variety's naturally high acidity to settle without losing its drive. The wine is then aged for twelve months, split between barrique and tank, before the two portions are blended and rested for a further five months in tank ahead of bottling. That long, unhurried handling gives an Aligoté with more flesh and texture than the grape is generally credited with, while the freshness stays intact.

Best drunk young, within two or three years. Serve at 10-12°C with oysters, gougères or a plate of jambon persillé.
