Description
Germain makes a tiny quantity of Meursault Perrières from 0.16 hectares in the sector known as Les Petites Perrières.
Les Perrières is Meursault's most revered Premier Cru, its name a reference to the old quarries on the slope; much of the soil is limestone debris, which holds warmth while also giving the wines their mineral cut. Domaine Henri Germain's holding here is very small, in the Petites Perrières sector, and the wine is made in the same manner as the rest of the cellar: whole-bunch pressing, fermentation in barrel with a low proportion of new wood, and a long, patient élevage on lees before bottling. The style is deliberately not lean. Germain's Perrières is consistently deep and powerful while retaining the stony character of the site, and it stands with his Charmes as the pinnacle of the range.
Worth five years in the cellar and capable of fifteen or more. Serve at 10-12°C with lobster, roast veal or aged comté.
