Description
Les Chevalières lies high on the slope above the village of Meursault, on chalky soils that continue the premier cru band across the commune.
The premier crus of Meursault run in a band along the mid-slope, but that band does not stop where the classification does. Les Chevalières sits above the village next to Les Rougeots, at much the same altitude and on much the same soils as the classified vineyards, and it regularly makes wine that would justify premier cru status. As the slope turns around the village the vineyards face progressively more to the east and become cooler and rockier as they climb towards Auxey-Duresses, which shows in the wine as tension and a chalky edge rather than richness alone. Domaine Henri Germain works these parcels in the traditional way, pressing whole bunches, fermenting in barrel with a restrained share of new wood and leaving the wine on its lees for a long, slow élevage.
Ready from two or three years and good for eight to ten. Serve at 10-12°C with roast chicken, seared scallops or a soft washed-rind cheese.
