Domaine Henri Germain Meursault Les Chevalières comes from a chalky lieu-dit high above the village that sits on the same band of soil as the premier crus.
Les Chevalières lies high on the Meursault slope above the village, next to Les Rougeots, and is in effect a continuation of the premier cru band that runs across the hill, with much the same soils and altitude. Wines from here regularly show a definition that would justify a higher classification, and the site has long been one of the reference lieux-dits of the commune. Domaine Henri Germain is a small family estate in Meursault working a patchwork of such parcels. The approach is the same throughout the cellar: hand harvesting, whole-bunch pressing, fermentation on indigenous yeasts and an unhurried élevage in barrel with a low proportion of new wood before the wine is assembled in tank. Chalk and altitude give a taut, cool style beside the domaine's denser Limozin.
Drinking well from two or three years and holding for eight or more. Serve at 10-12°C with oysters, roast fish or a chicken and tarragon dish.
