Description
Criots-Bâtard-Montrachet is the smallest grand cru of the Côte de Beaune, and Lamy's holding within it is farmed at high vine density.
The vineyard covers a little over 1.5 hectares at the Chassagne-Montrachet end of the Montrachet hillside, immediately below Bâtard-Montrachet, on limestone with a thin covering of clay and stones. Olivier Lamy applies the same close-planting approach here that he uses in his Saint-Aubin sites, with vines set far tighter than the Burgundian norm so that each carries only a small crop. Picking is by hand and the fruit is pressed slowly, fermented with natural yeasts and raised at length in barrel and larger cask on its lees, without bâtonnage, in a cellar kept cold enough to slow the whole process down.
A wine for the long term that needs five to ten years to show its full range; serve at 10-12°C with lobster, turbot or poached Bresse chicken.
