Domaine Hubert Lamy Grand Cru Criots-Bâtard-Montrachet Haute Densité comes from a 0.05-hectare parcel planted at 24,000 vines per hectare, and is raised without any new oak.

Criots-Bâtard-Montrachet is the smallest of the Montrachet grand crus, under two hectares in total, lying entirely within Chassagne-Montrachet. The Lamy family has farmed vines here for three generations, and the parcel borders the south-east corner of Bâtard, immediately alongside the holding of Domaine d'Auvenay. Olivier Lamy has taken planting density in the plot to 24,000 vines per hectare, part of the high-density programme he has extended across the estate. Unlike most grand cru white Burgundy, the wine sees no new wood at all: it is raised in a single 250-litre barrel of six years' age, with part of the ageing in a glass Wineglobe, and when the crop stretches to a second vessel that too is a Wineglobe. The vessel is kept deliberately out of the way.

Worth five years and capable of twenty in a good cellar. Serve at 10-12°C with turbot, lobster or a mature Comté.
