Domaine Hubert Lamy Puligny-Montrachet Les Tremblots Haute Densité comes from a village parcel interplanted to 22,000 vines per hectare.

Les Tremblots lies on the flatter southern side of Puligny-Montrachet, close to the Chassagne border. Lamy's vines here were planted mostly between 1946 and 1970, and Olivier Lamy has since interplanted the rows with massale selection material to bring the density up to 22,000 vines per hectare, roughly double the Burgundian norm. The theory behind high density is competition: more vines fighting for the same water and nutrients means fewer bunches on each, deeper roots and greater concentration in what does ripen. Lamy admits he has made a rod for his own back, since these parcels take more than twice the work of his regular vines, but the results have convinced him to extend the practice across the domaine. The combination of ripeness, acidity and mineral intensity here is unusual for village Puligny.

Give it three to five years and drink over the following decade. Serve at 10–12°C with lobster, roast chicken or Beaufort.
