Domaine Hubert Lamy Puligny-Montrachet Les Tremblots Haute Densité is grown at 22,000 vines per hectare, roughly double the normal Burgundian planting density.

Olivier Lamy's high-density plantings are the most distinctive thing about this Saint-Aubin domaine. The theory is that crowding the vines forces them to compete, driving roots deeper and cutting the crop per plant, and Lamy has extended the practice from Saint-Aubin to a handful of parcels elsewhere. Les Tremblots is a village site in Puligny-Montrachet, planted for the most part between 1946 and 1970 and since interplanted with mass-selection cuttings to take the density to 22,000 vines per hectare. He is candid that the high-density plots take more than twice the work of the rest, but the wines have justified it. In the cellar the approach is restrained, with long lees ageing in barrel and very little new wood, which leaves the ripeness, acidity and mineral intensity of the site to carry the wine.

Best from three years and good for a decade. Serve at 10-12°C with grilled fish, roast chicken or a soft washed-rind cheese.
