Domaine Hubert Lamy Saint-Aubin 1er Cru Clos du Meix comes from a walled parcel of just 0.7 hectares at the western edge of the village.
Saint-Aubin sits in the combe that runs inland from the Côte de Beaune's great white-wine communes, sharing their limestone without commanding their prices. Clos du Meix is a small enclosure at 300 metres, immediately below Derrière chez Edouard, planted by the Lamy family between 1985 and 1995. Being fully walled shelters the vines from the cold northerly winds that funnel down the valley, and the heavier clay in the topsoil holds moisture through dry summers, which shows in the wine's texture. That topsoil is shallow, roughly thirty centimetres before the roots strike hard limestone, and this is the source of the wine's mineral cut. Olivier Lamy has run the domaine since the mid-1990s and is known for very high planting densities, low yields, whole-bunch pressing and restrained use of new oak.
Drink over the next five to eight years. Serve at 10-12°C alongside grilled john dory, chicken with tarragon or freshly shucked oysters.
