Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard is grown on white marl behind the village cemetery.
Derrière chez Edouard is a south-east facing Premier Cru that Olivier Lamy divides into three separate cuvées. The Pinot Noir vines at the foot of the slope were planted in 1960; directly behind them, on the steeper ground, are the Chardonnay vines planted some twenty years ago at a density of 14,000 vines per hectare, well above the Burgundian norm. At the very top of the vineyard sits the Haute Densité parcel, planted at a staggering 30,000 vines per hectare. The soils throughout are a powerful white marl, a chalky clay that consistently imposes a deep and structured character on the finished wine. Against current Burgundy prices, this remains one of the better propositions in the Lamy range.
Worth three to five years in bottle and good for a decade beyond. Serve at 10–12°C with roast pork, grilled bream or a firm goat's cheese.
