Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard 2021

Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard is a white Burgundy from a southeast-facing premier cru planted at densities of up to 30,000 vines per hectare.

Saint-Aubin lies in a side valley running west from Chassagne-Montrachet and Puligny-Montrachet, and its premier crus sit on the same band of limestone as those better-known neighbours. Derrière chez Edouard climbs the slope behind the village cemetery, and Domaine Hubert Lamy draws three separate cuvées from it. The Chardonnay occupies the steeper upper section, planted some twenty years ago at 14,000 vines per hectare, with the Haute Densité parcel above it at 30,000 vines per hectare, figures far beyond Burgundian norms and adopted to increase competition between vines and restrict the crop each one carries. Older Pinot Noir, planted in 1960, sits on the lower part of the plot. The soils are white marl, a chalky clay that reliably lends the wines of this site depth and structure. Ageing is in older barrels, so oak stays in the background.

Approachable on release but built to reward five to ten years in bottle. Serve at 10-12°C with roast chicken, seared scallops or a mature Comté.
