Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Blanc comes from Chardonnay planted at 14,000 vines per hectare on powerful white marl.
Derrière chez Edouard sits behind the village cemetery on a south-east-facing slope, and Lamy makes three separate cuvées from it. Pinot Noir occupies the plantings from 1960; on the steeper slope directly behind are the Chardonnay vines that give this wine, planted roughly two decades ago at 14,000 vines per hectare, well above the Burgundian norm. Higher again, at the top of the vineyard, lies the Haute Densité parcel planted at a startling 30,000 vines per hectare. The soil throughout is white marl, a chalky clay that reliably imposes a deep, structured character on the finished wine, and the elevation keeps the site cool. Given what comparable ground produces on the other side of the ridge, this remains a well-priced wine in the context of current Burgundy prices.
Deep and rocky, and best from three years out to twelve. Serve at 10-12°C with roast turbot, veal blanquette or a mature Beaufort.
