Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité, in magnum, comes from a plot planted at 30,000 vines per hectare that yields a single barrel.
This is the most extreme expression of Olivier Lamy's high-density experiment. The 0.7-hectare parcel was planted twenty years ago with vines spaced around thirty centimetres apart in one-metre rows, roughly three times the usual Burgundian density. At that spacing Lamy typically gets a maximum of three tiny clusters per vine, sometimes one and sometimes none, and the whole plot produces only enough juice to fill one barrel. The trials have produced wines quite unlike his conventionally planted cuvées, which is why he has extended the programme to Les Tremblots in Puligny at 22,000 vines per hectare and to his sliver of Criots-Bâtard-Montrachet at 24,000. Allocations rarely run to more than a case or two, and in magnum the quantities are smaller again.
The format will slow it further; give it five years and drink across twenty-five. Serve at 10–12°C with lobster, turbot or aged Comté.
