Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité 2019

Cuvée Haute Densité comes from the section of Derrière chez Edouard that Olivier Lamy replanted at extreme vine density, up to 30,000 plants per hectare.

Saint-Aubin lies in the valley behind Chassagne-Montrachet and Puligny-Montrachet, and Derrière chez Edouard is one of its premiers crus, high on the slope on thin soil over hard limestone. Lamy revived the pre-phylloxera practice of very close planting here, which forces the vines to compete, drives roots deep and cuts the crop per plant to a handful of bunches. The vines are worked by hand or with a narrow straddle tractor, since nothing else fits between the rows. In the cellar the wine is fermented with natural yeasts and given a long élevage in barrel and larger cask, without bâtonnage, so the texture comes from lees contact rather than stirring.

Built to age and best given five years or more; serve at 10-12°C with roast poultry, lobster or a mature hard cheese.
