Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité 2019

Cuvée Haute Densité comes from a tenth of a hectare within Derrière chez Edouard that Olivier Lamy planted in 2004 at 28,000 vines per hectare.

Saint-Aubin lies in the side valley behind Chassagne-Montrachet and Puligny-Montrachet, and Derrière chez Edouard is one of its premiers crus, on a steep south-east-facing slope above the village with shallow stony clay over white marl. Lamy revived the pre-phylloxera practice of very close planting here; at close to three times the Burgundian norm the vines compete, root deep and carry only a few bunches each, and the berries come out small. The slope is steep enough that the soil is worked with a small manual till hauled by a winch anchored at the top. Domaine Hubert Lamy was founded in 1973 with eight hectares and now covers about 18.5, farmed by sustainable and organic means; Olivier has run it since 1996. The fruit is pressed, settled overnight and fermented on ambient yeasts, then held some two years on its lees in 300- and 600-litre barrels, mostly used, with six months more in tank.

Built to age and best given five years or more. Serve at 10-12°C with roast poultry, lobster or a mature hard cheese.
