Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité is grown at 30,000 vines per hectare and offered here in 1.5-litre magnum.

The plot covers 0.7 hectares at the top of Derrière chez Edouard, the rockiest ground in the vineyard and the coolest part of its mesoclimate. Planted more than twenty years ago, the vines stand around 30 centimetres apart along the row with a metre between rows, a density that forces them to compete and root deeply. Lamy takes at most three small clusters from each, sometimes one and often none, and the entire parcel produces enough juice for a barrel or two. The experiment convinced him to increase density in other sites, among them Les Tremblots in Puligny-Montrachet at 22,000 vines per hectare and Criots-Bâtard-Montrachet at 24,000. Set against the standard cuvée from the same slope, this brings greater intensity, salinity and mineral concentration. Volumes are tiny and the wine is no longer shown in the cellar.

Magnums ask for patience: six to twenty-five years. Serve at 10-12°C with lobster, roast turbot or a mature alpine cheese.
