Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité Blanc is grown at 30,000 vines per hectare, the highest density in the domaine.
This parcel covers 0.7 hectares planted more than twenty years ago at the top of the vineyard, where the soil is at its rockiest and the climate at its coolest. The vines stand around 30 centimetres apart in one-metre rows, and at that spacing Olivier Lamy takes a maximum of three small clusters per vine, sometimes one and sometimes none, so the whole plot yields barely enough juice to fill one or two barrels. The trials here were the starting point for the high-density work now extended to Les Tremblots in Puligny at 22,000 vines per hectare and the sliver of Criots-Bâtard-Montrachet at 24,000. Compared with the standard cuvée from the same site, this is more intense, more saline and more concentrated, with less overt flesh.
Best given four or five years and good for well over a decade. Serve at 10-12°C with grilled fish, scallops or a hard alpine cheese.
