Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité comes from vines planted at 30,000 per hectare, roughly three times the Burgundian norm.
The parcel runs to 0.7 hectares at the top of Derrière chez Edouard, where the soil is at its rockiest and the mesoclimate at its coolest. The vines were planted more than twenty years ago about 30 centimetres apart along the row, with a metre between rows. At that spacing Lamy takes a maximum of three tiny clusters per vine, sometimes one and sometimes none, and the whole plot yields enough juice for a barrel or two. The results were different enough from the rest of the vineyard that he went on to raise density elsewhere, including Les Tremblots in Puligny at 22,000 vines per hectare and Criots-Bâtard-Montrachet at 24,000. Against the neighbouring cuvée from the same site, the rule is more intensity, more salinity and greater mineral concentration. Allocations rarely run to more than a few cases.
A wine to cellar, best from five years out to twenty. Serve at 10-12°C with turbot, roast lobster or aged Comté.
