Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Cuvée Haute Densité comes from vines planted at 30,000 per hectare, roughly ten times the Burgundian norm.
Olivier Lamy planted this 0.7-hectare block more than twenty years ago at the top of Derrière chez Edouard, where the soil is at its rockiest and the mesoclimate at its coolest. The vines stand thirty centimetres apart along rows a metre wide. At that density each vine carries at most three tiny bunches, sometimes one or two and sometimes none, and the whole plot yields only a barrel or two. The wine it makes is unlike anything else from the same vineyard: more intense, more saline, more rocky concentration, as though the vines were drawing harder on the stone beneath them. The experiment led Lamy to raise density across his other parcels, including Les Tremblots at 22,000 vines per hectare and Criots-Bâtard-Montrachet at 24,000. It sits alongside his revival of Poussard pruning as work that has made other growers rethink how they plant.
Worth five years before opening and good for well beyond, it suits turbot, lobster or poultry in cream. Serve at 10-12°C.
