Domaine Hubert Lamy Saint Aubin 1er Cru Derrière chez Edouard Vieilles Vignes Rouge has long been the finest red the domaine makes.
Saint-Aubin is now thought of as a white appellation, but the lower slopes of its Premiers Crus hold more clay and have always grown good Pinot Noir. This wine comes from just under a hectare on the lower part of Derrière chez Edouard, where the soils are heaviest. The vines are more than fifty years old and give very small, ripe, intensely flavoured bunches, which is where the depth and layering of the wine come from. Olivier Lamy worked with roughly 60 per cent whole bunches, adding lift and structure without stalky character, and did not add sulphur at any point until bottling. It is a red that repays cellaring rather than one made for immediate drinking, and quantities are modest.
Give it three years and drink over the following decade. Serve at 16–18°C with roast lamb, game birds or a mature washed-rind cheese.
