Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard Vieilles Vignes Rouge comes from the lower, clay-rich part of a vineyard better known for white.
Saint-Aubin lies in a side valley behind Chassagne and Puligny and is thought of primarily as a white wine commune, but Pinot Noir still occupies its heavier soils and has long been part of the Lamy range. Derrière chez Edouard is one of the domaine's core premier crus, and this red comes from just under a hectare on the lower slope where clay content is highest. The vines are more than fifty years old and give very small, ripe bunches, which is the main reason the wine has the depth and layering it does. Olivier Lamy used roughly 60 per cent whole bunches in the fermentation and added no sulphur until bottling, raising the wine in used barrels so the site rather than the wood sets the tone.
Give it two or three years and expect it to run for a decade. Serve at 16-18°C with roast lamb, game birds or a mushroom tart.
