Domaine Hubert Lamy Saint-Aubin 1er Cru En Remilly 2019

En Remilly is the Saint-Aubin premier cru that runs up the hill directly alongside Chevalier-Montrachet.

The vineyard sits on the Puligny side of the Saint-Aubin valley, sharing the same limestone spine as the grands crus over the boundary, and its soils are thin and stony with rock breaking the surface in places. The exposure is south-easterly and the altitude a little higher than Puligny's, which keeps acidity firm and picking later. Domaine Hubert Lamy is the reference producer in the commune, and Olivier Lamy has spent two decades reducing yields, planting more densely and working with less new oak. This wine is fermented with natural yeasts and raised on its fine lees in barrel and larger cask, without bâtonnage, in a deliberately cold cellar.

Approachable after two or three years and holding for a decade; serve at 10-12°C with grilled fish, roast veal or a Comté.
