Domaine Hubert Lamy Saint-Aubin 1er Cru En Remilly 2019

En Remilly is the Saint-Aubin premier cru that runs up the hill alongside Chevalier-Montrachet, and Lamy's two hectares of it sit directly above Le Montrachet.

The vineyard lies on the Puligny side of the Saint-Aubin valley, sharing the limestone spine of the Grands Crus over the boundary, on a steep south-facing slope where the soil is shallow and limestone-rich. Lamy's holding runs to 2.02 hectares, planted in 1989. Domaine Hubert Lamy was founded in 1973 with eight hectares and now farms about 18.5 across Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Santenay; Olivier Lamy took charge in 1996 and ended sales to négociants the following year, since when he has cut yields, planted more densely and pulled back on new oak. Farming is sustainable and organic in practice, with Guyot Poussard pruning and hand de-budding. The wine is pressed, settled overnight and fermented on ambient yeasts, then held about two years on its lees in 300- and 600-litre barrels, mostly used, and six months in tank, with sulphur added only during ageing.

Approachable after two or three years and holding for a decade. Serve at 10-12°C with grilled fish, roast veal or a Comté.
