Description
Les Frionnes is a premier cru on the northern side of the Saint-Aubin valley, above the hamlet of Gamay.
Where En Remilly and Derrière chez Edouard lie on the stony ground facing Puligny, Les Frionnes sits across the valley on soil with more clay in it, which gives a rounder wine that opens earlier. The site faces south-east and the vines are old enough to keep yields naturally modest. Domaine Hubert Lamy farms this parcel as part of a range covering most of the commune's premiers crus, and Olivier Lamy handles it as he does the rest: hand-picking, whole-bunch pressing, fermentation with natural yeasts, and ageing on fine lees in barrel and larger cask, with no stirring and restrained use of new wood.
Drinking well within two or three years and good for six or more; serve at 10-12°C with roast chicken, creamy pasta or a mild washed-rind cheese.
