Domaine Hubert Lamy Saint-Aubin 1er Cru Les Frionnes is a premier cru from old, decomposed limestone and clay, with vines going back to 1935.
Saint-Aubin lies in the combe behind the Montrachet hill, and its premier crus, long overlooked, now supply some of the Côte de Beaune’s best-value whites. Lamy farms 2.4 hectares in Les Frionnes, planted in 1935, 1960 and 1985, on a south-east-facing slope where the topsoil is scattered with fragmented limestone over decomposed limestone and clay. The vineyard sits next to Derrière chez Edouard but catches slightly more warmth, so it is always picked earlier and gives a rounder, pulpier fruit profile while holding a saline freshness and a compact, rocky finish. Olivier Lamy describes it as a terroir with one foot in Chablis and one foot in the Côte de Beaune, which is a fair summary of the balance between tension and flesh you find in the glass.
Best from two years out to about ten. Serve at 10-12°C with grilled fish, chicken with tarragon or a firm goat’s cheese.
