Domaine Hubert Lamy Saint-Aubin La Princée 2019

La Princée is Lamy's village Saint-Aubin, assembled from five parcels on the western side of the valley rather than from a single named site.

Saint-Aubin's village vineyards lie below the premiers crus on ground that holds more clay, and the wines are rounder and quicker to come around. La Princée gathers three hectares across En Joncul, Traversaine, En l'Ebaupin, Le Banc and Champ Tirant, all on the western slope and planted between 1985 and 2000. Domaine Hubert Lamy was founded in 1973 with eight hectares and now farms about 18.5; Olivier Lamy took charge in 1996 and handles the village wines exactly as he does the premiers crus. Farming is sustainable and organic in practice, with Guyot Poussard pruning and hand de-budding. The fruit is pressed, settled overnight and fermented on ambient yeasts, then aged around 24 months on its lees in 300- and 600-litre barrels, mostly used, with six months more in tank; sulphur is added only during ageing, and the wine is fined or filtered only if it needs it.

Ready on release and good for three to five years. Serve at 10-12°C with grilled fish, quiche or a young goat's cheese.
