Description
La Princée is a village-level Saint-Aubin lieu-dit bottled separately by Domaine Hubert Lamy.
Saint-Aubin's village vineyards lie on the flatter, deeper ground below the premiers crus, where the soil holds more clay and the wines are rounder and quicker to come around. La Princée is one of the named parcels the domaine keeps apart rather than blending into a generic village cuvée. Olivier Lamy works it in the same way as his premiers crus, with hand-picking, whole-bunch pressing, natural-yeast fermentation and ageing on fine lees in barrel and larger cask, without bâtonnage. The result is a Saint-Aubin that carries the domaine's precision at a more approachable level of the range.
Ready on release and good for three to five years; serve at 10-12°C with grilled fish, quiche or a young goat's cheese.
