Domaine Hubert Lamy Saint-Aubin La Princée is a village blend drawn from ten small parcels in the cool eastern combe.
La Princée brings together ten village plots spread across just under three hectares. One-third of the vines are now over sixty years old, with the remainder planted in 1985 and 2000, and the blend also carries around ten per cent of fruit from the Premier Cru Les Frionnes. All the parcels lie in the cooler, east-facing Saint-Aubin combe, the valley that runs back from the main slope, on chalky mineral soils. That siting explains the style: this is a racy white Burgundy with a good deal of energy and a limestone-driven personality rather than a broad or buttery one. It is the wine that best shows what Saint-Aubin does at village level, and it is made with the same care Olivier Lamy applies to his Premiers Crus.
Drink over the next five to eight years. Serve at 10–12°C with grilled prawns, chicken salad or a fresh goat's cheese.
