Domaine Hubert Lamy Saint-Aubin La Princée 2021

Domaine Hubert Lamy Saint-Aubin La Princée is a village white blended from ten small parcels in the cool, east-facing side of the Saint-Aubin valley.

Saint-Aubin's vineyards climb the combe that runs inland from the Côte d'Or's white-wine heartland, and aspect matters more here than in most communes. La Princée draws on just under three hectares spread over ten plots, all in the cooler, east-facing part of the appellation on chalky, mineral soils. A third of the vines are more than sixty years old, the remainder planted in 1985 and 2000, and this bottling also carries about ten per cent of fruit from the premier cru Les Frionnes. Olivier Lamy's approach is consistent across the range: dense plantings, low yields, whole-bunch pressing, indigenous-yeast ferments and ageing in used barrels, the aim being to transmit limestone rather than winemaking. At village level the result is a taut, smoky style of white Burgundy with a good deal of energy and no excess weight.

Ready now and holding well for four to six years. Serve at 10-12°C with grilled prawns, chicken paillard or a goat's cheese tart.
