Domaine Hubert Lamy Santenay 1er Cru Clos des Gravières Blanc comes from a walled plot of barely a third of a hectare that Dr Lavalle rated Tête de Cuvée in 1855.
Gravières lies at the northern end of Santenay, close to the Chassagne-Montrachet border and effectively a continuation of the Clos de Tavannes. Within it sits a historically revered walled section, and Lamy farms 0.38 hectares there. The vines run up a 30-degree slope and their roots reach pure limestone almost immediately, which is the source of the wine’s cut. Most of the plants are relatively young: the domaine has increased planting density and replaced substandard material with massale cuttings taken from a parcel of older vines dating from 1968. Lamy also makes a red from 0.28 hectares of Pinot Noir inside the same clos. Part of the white is now vinified in glass Wineglobe, a neutral vessel he has been buying more of each year, alongside the domaine’s usual cask maturation.
Fleshier and more layered than the Saint-Aubins, and good for three to ten years. Serve at 10-12°C with roast pork, grilled scallops or a mild washed-rind cheese.
