Domaine Huet's Le Haut-Lieu Moelleux is the sweet wine from the estate's founding vineyard, and usually the first of the three Vouvray cuvées to come round.
Le Haut-Lieu was bought in 1928 and was the family's first vineyard. It sits on the Première Côte, a nine-hectare plot on the deep brown chalky clay known locally as aubuis, with the yellow tuffeau limestone bedrock lying as much as four metres below the surface. That richer soil produces round, supple wines that can be enjoyed young, and this is generally the earliest maturing of the three cuvées; longevity is not sacrificed for it, though, and Huet bottles from the 1940s are still drinking well. The moelleux style carries roughly 40 to 60 g/L of residual sugar and depends chiefly on passerillage — grapes shrivelled on the vine — rather than on botrytis, which keeps the weight closer to a fine Mosel than to Sauternes and leaves the acidity in charge.
Approachable now and capable of decades. Serve at 8–10°C with washed-rind or blue cheese, pâté, or a spiced pork dish.
