Domaine Huet's Le Haut-Lieu Moelleux Première Trie is made only in the best years, from a berry-by-berry selection of the ripest fruit in the estate's founding vineyard.
Le Haut-Lieu was the first vineyard Huet owned, bought in 1928, and it sits on a slightly south-facing plateau at one of the highest points of the Première Côte. The nine-hectare plot lies on deep, brown, chalky clay known as aubuis, with the yellow tuffeau limestone bedrock as much as four metres down; that richer soil gives round, supple wines that drink well young, though bottles from the 1940s are still in fine order. Huet's moelleux typically carry between 40 and 60 g/L of residual sugar and are made largely from grapes dried on the vine by passerillage rather than from botrytis, so the reference point for weight is a great Mosel rather than Sauternes. In the top years a première trie is picked, berry by berry, from the very ripest and often botrytis-affected fruit. What marks it out is balance: racy and transparent rather than heavy.
It will drink well for decades. Serve at 8–10°C with blue cheese, a terrine, or a fruit tart.
