Domaine Huet Vouvray Le Haut-Lieu Sec comes from the estate's founding vineyard, a nine-hectare plot of deep chalky clay on the Première Côte.
Vouvray sits on the right bank of the Loire above Tours, where Chenin Blanc grows on limestone tuffeau and its clay overburden, and Domaine Huet has been the benchmark since the 1920s. Le Haut Lieu was the estate's first vineyard, bought in 1928, and gives the domaine both its house and its name in the appellation. It occupies a plateau with a slight south-facing gradient at one of the highest points of Vouvray, nine hectares of deep brown chalky clay known locally as aubuis, with the yellow tuffeau bedrock as much as four metres down. The richer soil makes rounder, suppler wines that drink well young, and Le Haut-Lieu is usually the earliest maturing of the three Huet single vineyards, though bottles from the 1940s show how long they can last. The dry wines carry between 4 and 8 grams per litre of residual sugar depending on the season.
Fine now and capable of decades in bottle, it is a go-to for seafood, white meats or a mature goat's cheese. Serve at 10 to 12 degrees.
