Domaine Huet Vouvray Le Haut-Lieu Sec comes from the estate's founding vineyard, the deepest-soiled and earliest-maturing of its three Vouvray sites.
Le Haut-Lieu was bought in 1928 and gave the domaine its start. It is a nine-hectare plot on the Première Côte, on a plateau with a gentle southern tilt at one of the highest points of the appellation. The soil is a deep brown chalky clay known locally as aubuis, with the tuffeau limestone bedrock lying as much as four metres down; that depth gives rounder, suppler wine than the shallow-soiled Clos du Bourg or Le Mont. In practice it is the first of the three cuvées to be ready, though bottles from the 1940s still show well, so early drinking should not be mistaken for a short life. Huet's dry Vouvrays carry between 4 and 8 g/L of residual sugar depending on the year, which reads as texture rather than sweetness against the Chenin acidity.
Good on release and better still after five to ten years; serve with seafood, roast pork or a chicken and tarragon dish, at 10-12°C.
