Domaine Jaeger-Defaix Rully 1er Cru Clos du Chapître is a one-hectare walled monopole behind the family house and cellars.
Clos du Chapître sits within the Rully premier cru Chapître, enclosed by a two-metre stone wall, and is farmed as a monopole by Hélène Jaeger-Defaix. Yields are kept low by severe pruning, de-budding and a green harvest, and the bunches are hand-sorted so that only the best fruit goes into the vat. The wine ages twelve months in oak barrels, ten per cent of them new, then settles in tank before bottling. Jancis Robinson MW has written that wines from this site prove the Côte Chalonnaise can now interest drinkers raised on the Côte d’Or, and the clos reliably shows a clear step up from village Rully in depth, structure and complexity. It is tense and mineral with a crushed-velvet mouthfeel, and a juicy brightness runs through it. Sealed under Diam.
Approachable young and worth six to eight years in the cellar. Serve at 16-18°C with roast duck, veal or a dish of braised mushrooms.
