Domaine Jaeger Defaix Rully Blanc 1er Cru Les Cloux 2019

Domaine Jaeger Defaix Rully Blanc 1er Cru Les Cloux is a Côte Chalonnaise white raised entirely in older barrels.

Rully is the northernmost of the Côte Chalonnaise communes and makes roughly two-thirds of its wine in white. Les Cloux is a south-east facing Premier Cru sitting just above the Premier Cru Chapître, on the clay and limestone mix that underpins most of Burgundy's better slopes. It is a site with a reputation for balancing mouth-filling flesh against tangy grip and fine length. Domaine Jaeger Defaix, run by Hélène Jaeger-Defaix of the Chablis Defaix family, works the vineyard along traditional lines. This is entirely Chardonnay, fermented and then aged for eighteen months in older barrels, some as much as seven years old, so the oak lends breadth rather than flavour. It was bottled after only a light filtration, which leaves the texture intact.

Ready to drink and will hold for five or six years. Serve at 10-12°C with roast chicken, veal or a plate of grilled prawns.
