Domaine Jaeger Defaix Rully Blanc 1er Cru Les Cloux 2021

Domaine Jaeger Defaix Rully Blanc 1er Cru Les Cloux is a Côte Chalonnaise Chardonnay from a southeast-facing premier cru above Chapître.

Rully sits at the northern end of the Côte Chalonnaise and has become one of the more reliable sources of white Burgundy at sensible money, its better premiers crus planted on the same clay and limestone mix found across the region's best sites. Domaine Jaeger Defaix works a small holding of these vineyards with a light hand in the cellar. Les Cloux lies just above the premier cru Chapître with a southeast exposure, and the site is known for balancing mouth-watering flesh with tangy grip and fine length. This wine is entirely Chardonnay, fermented and then aged in older barrels of up to seven years, though some younger wood was brought in this year simply to keep the barrels full. The result is racy and tangy, with florals, pear, confit citrus and a light touch of spicy oak, held together by a textured, poised mouthfeel and vivacious acidity. It is sealed under Diam.

There is no hurry here; it will drink well for five or six years. Serve at 10-12°C with roast chicken, veal or a gratin of white fish.
