Domaine Jaeger Defaix Rully Blanc 2023

Jaeger-Defaix's village Rully Blanc comes from Bas de Vauvry, a parcel lying immediately below the 1er Cru Vauvry.

Rully is the Côte Chalonnaise's white-wine stronghold, producing roughly two-thirds Chardonnay on clay and limestone slopes north of Mercurey. This is a recent addition to the domaine's range, drawn from a single lieu-dit at the foot of the Vauvry hillside. The fruit is pressed as whole bunches, fermented with indigenous yeasts and aged twelve months in older 500-litre barrels, a size and age of vessel chosen for texture rather than oak flavour. The family's low yields are the other half of the equation, giving the wine calibrated acidity, shape and length that are unusual at village level. It is a straightforward, well-made white Burgundy of the sort that has become steadily harder to find at sensible money, and it is drinkable from the day it is released.

Best over the next three to five years with grilled fish, roast chicken or a creamy soft cheese; serve at 10–12°C.
