Domaine Jaeger Defaix Rully Rouge 1er Cru Clos du Chapître is a walled monopole of one hectare lying directly behind the family cellars.
Rully is the northernmost of the Côte Chalonnaise villages and makes both colours, its reds from Pinot Noir on clay and limestone. The Clos du Chapître is a one-hectare plot enclosed by a two-metre stone wall within the premier cru Chapître, and it belongs to this domaine alone. Yields are controlled by severe pruning, de-budding and a green harvest, and the bunches are sorted by hand so that only the best clusters go into the vat. In this vintage 15% of the ripest whole bunches were retained, and the wine spent fifteen months in oak barrels, half of them new, before bottling under Diam closure. Jancis Robinson has written of this site that it offers proof the Côte Chalonnaise can field wines of serious interest to drinkers raised on the Côte d'Or.
Charming with food from the outset, though it should hit its stride around 2026 and hold well beyond. Serve at 16-18°C with roast pork, mushroom tart or a plate of charcuterie.
