Domaine Jean Dauvissat Père & Fils Chablis 2023

Domaine Jean Dauvissat Père & Fils Chablis is a dry Chardonnay from northern Burgundy.

Chablis sits closer to Champagne than to Beaune, and its wines are defined by the Kimmeridgian marl beneath them, a bed of clay and limestone packed with fossilised oyster shells laid down in a warm sea some 150 million years ago. Fermentation in stainless steel, without new oak, is the regional norm and leaves the soil to speak.

Serve at 10 degrees with oysters, shellfish or goat's cheese. Drink over the next six years.
