Domaine Jean Defaix Chablis Screw Cap 2024

Domaine Jean Defaix Chablis is a fresh, unoaked Chardonnay from a family estate in the village of Milly, bottled here under screw cap.

Based in Milly, just west of the town of Chablis, this estate is run by Daniel Dampt, who built it up alongside his father-in-law Jean Defaix, and by his sons Vincent and Sébastien. Between them the two families have worked vines here for more than 150 years, and all the fruit comes from their own vineyards. The soils are the classic Kimmeridgian mix of clay and chalky limestone that gives Chablis its distinctive mineral edge. Fermentation and ageing both take place in temperature-controlled stainless steel tanks, with no oak, to keep the wine pure, crisp and true to its place.

Pour it well chilled, at around 8 to 10 degrees. Freshly shucked oysters are the classic partner, and it is just as good with prawns, grilled whiting, sushi or goat's cheese. Made for drinking young, it will stay fresh for three to four years.
