Description
Domaine Jean Defaix Petit Chablis comes from the plateau land above the main Chablis slopes, where the geology changes and the wines are made for early drinking.
The distinction between Petit Chablis and Chablis is a matter of rock. The classic appellation sits on Kimmeridgian marl, the fossil rich limestone and clay of a Jurassic seabed, while Petit Chablis is grown mostly above it, on the harder Portlandian limestone of the plateau, which is younger and holds less clay. Those sites are cooler, higher and more exposed to the wind, and the wines they give are lighter in build and quicker to come round than village Chablis. Almost all Petit Chablis is fermented and kept in stainless steel, with no oak at all, so nothing stands between the grape and the ground it grew on.
Serve well chilled as an aperitif or with oysters, sushi or a plate of charcuterie, and drink it while it is young.
