Domaine Jean-Marc & Hugues Pavelot Savigny-lès-Beaune Blanc is a white Burgundy grown in one of the Côte de Beaune's most storied villages, made entirely from Chardonnay by a family long associated with the appellation.
Savigny-lès-Beaune sits in a sheltered valley carved by the Rhoin stream between Beaune and Pernand-Vergelesses, a village better known historically for its reds but capable of fine, mineral-driven whites from well-sited parcels. The Pavelot family has farmed vines here for generations, and the estate is today run jointly by Jean-Marc and his son Hugues, who tend around a dozen hectares including several premier cru holdings. Their approach favours careful vineyard work, including green harvesting to control yields and a broadly sustainable, lutte raisonnée philosophy, with grapes picked by hand and vinification kept traditional and largely non-interventionist in the cellar.
The result is a bright, food-friendly white Burgundy, well suited to seafood, poultry and creamy sauces, and a good introduction to the more restrained, savoury style of white wine coming out of the Côte de Beaune's red-wine heartland.
