Domaine Jean-Marc Bouley Thomas Bouley Bourgogne Chardonnay is a regional white Burgundy from a family domaine based in the red wine village of Volnay.
Bourgogne Blanc is the regional appellation for Chardonnay across Burgundy, and in the hands of a good Côte d'Or grower it is often made from parcels that sit just below or just outside the village boundaries, picked and vinified in the same cellar and by the same hands as the wines above them. Chardonnay arrived at its supremacy here over centuries of monastic and then commercial selection, and the classic treatment is a whole-bunch pressing, a slow ferment and time on lees. The Bouley family works out of Volnay, where Thomas Bouley now makes the wines with his father Jean-Marc. The appellation covers the whole of Burgundy, from Chablis in the north to the Mâconnais in the south, so the grower's name tells a drinker far more than the words on the label.
Best served at around 12 degrees with roast chicken, white fish or a soft creamy cheese.
