Domaine Jean-Marc et Thomas Bouley Bourgogne Aligoté is a white Burgundy from the region's second white grape, made by a Volnay family across two generations.
Bourgogne Aligoté is the one appellation reserved for the variety, and it covers the whole of Burgundy. Aligoté was widely planted down the Côte until Chardonnay took the finest slopes, leaving it on higher, stonier and cooler ground, which turns out to suit a grape that holds its acidity in warm years. Growers who take it seriously now give it old vines and careful farming, and the results have changed a good many minds. The Bouley domaine is based in Volnay, where Thomas Bouley makes the wines with his father Jean-Marc; the Aligoté is handled simply, so that its cut is not buried.
It is at its best well chilled, as an aperitif or with oysters, shellfish, charcuterie or gougères. It is also the classic base for a kir.
