Domaine Jean-Marc et Thomas Bouley Côte d'Or Chardonnay is a white Burgundy from the regional appellation reserved for the Côte d'Or itself.
Bourgogne Côte d'Or, recognised in 2017, narrows the broad regional appellation to vineyards within the communes of the Côte de Nuits and Côte de Beaune, so the label tells a drinker something real about where the fruit grew. The parcels tend to sit at the foot of the slope, below the village boundaries, and in a serious cellar they are picked, pressed and raised much as the village wines are, usually with a whole-bunch pressing and time on lees. The Bouley domaine works from Volnay, where Thomas Bouley makes the wines with his father Jean-Marc. Chardonnay was grown here long before it had a settled name of its own, and it takes readily to the limestone and marl that run the length of the slope.
Best served at about 12 degrees with white fish, roast chicken or a plate of soft cheeses.
