Domaine la Réméjeanne Côtes du Rhône Les Chèvrefeuilles Blanc is a certified organic white built on old-vine Clairette.

Chèvrefeuilles is French for honeysuckle, the scent that carries through the southern Rhône in spring, and it gives this wine its name. Olivier Klein has long been an advocate for old-vine Clairette, an underrated southern variety that holds acidity and gives a saline, mineral finish, and it now makes up half the blend, with 25 per cent Roussanne and 25 per cent Grenache Blanc filling out the rest. The fruit grows on the domaine's cooler, east-facing sites, where limestone helps preserve freshness. Whole bunches are pressed and the juice ferments on heavy solids with natural yeasts, after which the wine rests on fine lees in concrete for six months before bottling. The style is mouth-filling and pulpy in texture, with the Roussanne adding a floral lift over a crisp, energetic palate.

Drink over the next three years. Serve at 10-12°C with grilled fish, roast chicken or a vegetable tart.
