Domaine la Réméjeanne Un Air de Réméjeanne comes from high-country vineyards around Sabran, on the cooler right bank of the Rhône.

Olivier Klein farms Domaine la Réméjeanne in the Gard, where the estate's certified-organic vineyards sit on high, sandy-limestone ground around the wooded hamlet of Sabran. The altitude keeps this corner of the southern Rhône cooler than most of the appellation, which suits the style Klein wants from Un Air de Réméjeanne: a vin de soif of juicy fruit and floral perfume rather than weight. The blend is seventy per cent Grenache to thirty per cent Syrah. After a five-day cold soak the wine spent less than a week on skins, with half the crop fermented as whole bunches to add lift and a buoyant structure. Ageing took place in concrete and the wine was bottled within a year of harvest, so there is no oak character at all — just rocky red-berry and wild strawberry fruit with a green-herb vivacity.

A lighter, supple style made for early drinking over two or three years. Serve at 16-18°C, or lightly chilled, with grilled lamb, charcuterie or a tomato and olive tart.
