Domaine Maire & Fils Tissot-Maire Crémant du Jura Brut Lapiaz is a traditional method sparkling wine from the Jura, in eastern France.
The Jura is a narrow ribbon of vineyard between Burgundy and the Swiss border, best known for its oxidative whites and for Savagnin, though sparkling wine has been made there for a very long time and Cremant du Jura was granted its own appellation in 1995. It is made by the traditional method, with the second fermentation taking place in bottle and a minimum period of lees ageing before disgorging, drawing chiefly on Chardonnay and Pinot Noir grown on the region's Jura vineyards are small and the region's total output is modest, so its sparkling wines have never been as widely seen abroad as those of Alsace or the Loire. The name Lapiaz refers to the fissured limestone pavement found across the Jura mountains, a nod to the geology under the vines.
Serve well chilled as an aperitif, or with shellfish, charcuterie and the soft mountain cheeses of the region such as Comte and Morbier.
