Domaine Merlin Mâcon La Roche Vineuse Les Cras is a white Burgundy from a single named parcel in the village the domaine calls home.
Olivier Merlin and his wife Corinne arrived at La Roche Vineuse in 1987, taking on a run down property and rebuilding it into one of the reference estates of the Maconnais; their son Theo now works alongside them. La Roche Vineuse sits in the northern Maconnais, on limestone and clay slopes. Les Cras is a named site within the village; the name recurs all over Burgundy and is generally taken to describe stony, chalky ground, the kind of poor soil that limits vigour. Bottling a Macon by individual parcel was, not so long ago, an unusual thing to do, and it reflects a conviction that these slopes repay the same attention as those further north. The whites are whole-bunch pressed, fermented with indigenous yeasts in barrel and given a long elevage on lees, the sort of treatment once reserved for the Cote d'Or.
Best served at about 11 to 12 degrees, with roast poultry, veal, richer fish dishes or a well made cheese souffle.
