Description
Domaine Merlin Pouilly-Fuissé is a white Burgundy from the best known appellation of the Maconnais, made by a grower who helped restore its standing.
Pouilly-Fuisse covers four communes in the far south of Burgundy, Chaintre, Fuisse, Solutre-Pouilly and Vergisson, beneath the two great limestone escarpments that give the landscape its shape. In 2020 the appellation gained its first premier crus, twenty two climats in all, the first such classification anywhere in the Maconnais. Olivier Merlin and his wife Corinne arrived at La Roche Vineuse in 1987, taking on a run down property and rebuilding it into one of the reference estates of the Maconnais; their son Theo now works alongside them. Their work in Pouilly-Fuisse, alongside a handful of others, was part of the change that led to that reclassification. The whites are whole-bunch pressed, fermented with indigenous yeasts in barrel and given a long elevage on lees, the sort of treatment once reserved for the Cote d'Or.
It suits roast poultry, pork, scallops, or a cheese course, and is best served at about 11 to 12 degrees.
