Domaine Merlin Pouilly-Fuissé Les Chevrières 2022

Domaine Merlin Pouilly-Fuissé Les Chevrières is a white Burgundy from a single named climat in the leading appellation of the Maconnais.

Pouilly-Fuisse covers four communes in the far south of Burgundy, Chaintre, Fuisse, Solutre-Pouilly and Vergisson, beneath the two great limestone escarpments that give the landscape its shape. In 2020 the appellation gained its first premier crus, twenty two climats in all, the first such classification anywhere in the Maconnais. Les Chevrieres is one of the sites named on labels here, and bottling by climat has become the way growers argue for individual slopes. Olivier Merlin and his wife Corinne arrived at La Roche Vineuse in 1987, taking on a run down property and rebuilding it into one of the reference estates of the Maconnais; their son Theo now works alongside them. The whites are whole-bunch pressed, fermented with indigenous yeasts in barrel and given a long elevage on lees, the sort of treatment once reserved for the Cote d'Or.

A wine for the table rather than the aperitif, good with turbot, poultry in cream or aged cheese, served at around 12 degrees.
